When the summer brings fresh produce from the garden, we are always looking for good southern recipes that are quick and easy to make. This one tastes best when the ingredients are straight from the garden.
Ingredients
1 Tablespoon olive oil
1 Tablespoon minced garlic
2 cups of yellow squash, sliced

1 Tablespoon fresh oregano, coarsely chopped
1 Tablespoon fresh basil, cut into fine strips
salt and pepper if needed
Southern Cooking Instructions
Heat oil in saucepan over medium heat.
Add garlic and saute for about 1 minute. Do not allow to brown.
Add the squash, tomatoes, and oregano.
Stir to combine well, increase to medium high heat.
When the tomatoes come to a boil, reduce to medium low heat.
Cover and allow to simmer 30-40 minutes. Stirring occasionally.
Taste prior to adding salt or pepper. If the veggies are really fresh, you may not need to add any.
